Potatoes are SO cheap! What are some of your favorite recipes?

This week you can get a 10lb bag of Russet Potatoes for $0.98 at Fred Meyer!  This got me thinking, what are some of your favorite ways to incorporate such a frugal (and filling) ingredient into you meals?

Parmesan Baked Potatoes

  1. 6 Tbsp. butter
  2. 3 Tbsp. grated Parmesan cheese
  3. ¾ tsp. salt (more or less to taste)
  4. ½ tsp. garlic powder (more or less to taste)
  5. Few dashes pepper
  6. About 6 medium Russet potatoes, washed and halved length-wise (any type of potato will work)

  2. Yum, those parmesan baked potatoes were so yummy, they are now a staple in our household! Our favorite is potato au gratin, however our waists prefer baked potatoes.

  3. Oven baked potato wedges (thick french fries). Quick and easy to prep and the kids love them!
    Cut potatoes into wedges, toss with a little vegetable oil, sprinkle with salt (or any other seasonings you like), bake on a cookie sheet at 400 for about 40 min until tender with a fork.

  4. Twice baked….mmmm! Ok, now I have ti put them on the dinner menu for tomorrow…lol

  5. I moved from California to Florida and here the price of potatoes is SO expensive! During season expect to pay $6 for 10lb bag. I used to pay no more than $2 in California for the same…The only reason I can think of is that transportation from Idaho increases the price that much…My husband still teases me when I buy potatoes…”Did you break the piggy bank?

  6. I love potatoes! When I was single and living in a cold climate I would very often just have a baked potato with cheese or sour cream for dinner. When we first started dating my husband made us baked potatoes for dinner with caramalized onions and a little grated Parm. Talk about a cheap meal! I often put them in soups to make the meal heartier and in winter I do roasted root veggies as a side dish. I’ll do potatoes and carrots, diced and tossed with olive oil and salt and pepper, spread out on a sheet pan and baked at 350 for 20 min or so. Also any leftover from this makes a great omelet filling the next morning.

  7. I have a quick and simple side dish and a southern favorite.

    Dice potatoes into maybe 1/2″ cubes (I’m not picky, I just cut). I cut enough to fill a 1 1/2 quart glass dish. Cut up a onion in whatever size you enjoy eating them. For me, I like them small. Mix in with potatoes. Salt and pepper. Cut up 3/4 to 1 whole stick of butter on top and put on the lid. Put in microwave on high for around 8 minutes, take out stir and go another 8 minutes. More or less until they are as soft as you like them.

    There is nothing better than a fried tater sandwich. Slice them long or round, fry them up and put on bread with some Blue Plate (yes, that’s what we use where I come from) mayonaise and enjoy. That’s a good southern comfort food.
