
Our assistant Morgan sent me this recipe and boy am I thankful! What a treat this was tonight. I was lucky enough to already have a few frozen bananas in the freezer, but here’s a tip – peel them BEFORE you freeze them! I already knew this, but I was in a hurry and I paid for it this time around. Trying to peel them frozen isn’t easy.

I added 1tbsp of PB2 to the recipe below and it was delicious and very creamy! Next time I might splurge and drizzle a bit of chocolate and peanuts over the top for a mock banana split. Also for a single serving, just use approximately one banana.
- Peel, slice, and freeze bananas. Once they are frozen, put them in the food processor or blender.
- Add a teaspoon of vanilla extract and 2 Tbsp of Fat Free Milk, Almond Milk, or Chocolate Almond milk and blend away until smooth and creamy. You can use a blender or food processor, whichever you have on hand. If it’s too think just add a little more milk.
- Feel free to add your favorite toppings ( just remember to add points for those items).
